- 1 lb Ground Lamb or Beef
- 2 Carrots, chopped
- 2 stalks Celery, finely diced
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 cup Peas
- 2 tbsp Worcestershire Sauce
- 1 cup Vegetable Broth
- 2 lbs Potatoes, peeled and chopped
- 4 tbsp Butter
- 1/4 cup Cream
- 1 tsp Thyme, fresh
- 1 tsp Rosemary, fresh
Instructions
- Prepare the Potatoes: Peel and chop potatoes, boil until tender.
- Cook the Filling: Heat oil, sauté onion, garlic, carrots, and celery for 5-7 minutes.
- Brown the Meat: Add ground lamb or beef, cook until browned, then stir in peas.
- Add Seasonings: Mix Worcestershire sauce, vegetable broth, herbs, salt, and pepper; simmer for 5 minutes.
- Mash the Potatoes: Drain water from potatoes, add butter and cream, mash until smooth.
- Assemble the Pies: Preheat oven to 400°F, layer meat mixture and then mashed potatoes in baking dishes.
- Bake: Bake for 20 minutes until golden.
- Cool and Serve: Cool for a few minutes before serving.
