Ingredients

  • 1 lb Ground Lamb or Beef
  • 2 Carrots, chopped
  • 2 stalks Celery, finely diced
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Peas
  • 2 tbsp Worcestershire Sauce
  • 1 cup Vegetable Broth
  • 2 lbs Potatoes, peeled and chopped
  • 4 tbsp Butter
  • 1/4 cup Cream
  • 1 tsp Thyme, fresh
  • 1 tsp Rosemary, fresh

Instructions

  1. Prepare the Potatoes: Peel and chop potatoes, boil until tender.
  2. Cook the Filling: Heat oil, sauté onion, garlic, carrots, and celery for 5-7 minutes.
  3. Brown the Meat: Add ground lamb or beef, cook until browned, then stir in peas.
  4. Add Seasonings: Mix Worcestershire sauce, vegetable broth, herbs, salt, and pepper; simmer for 5 minutes.
  5. Mash the Potatoes: Drain water from potatoes, add butter and cream, mash until smooth.
  6. Assemble the Pies: Preheat oven to 400°F, layer meat mixture and then mashed potatoes in baking dishes.
  7. Bake: Bake for 20 minutes until golden.
  8. Cool and Serve: Cool for a few minutes before serving.
