- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp ground nutmeg

- 1 cup granulated sugar
- ½ cup brown sugar
- 3 large eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup eggnog (for frosting)
- 1 cup powdered sugar (for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
- In another bowl, beat granulated sugar, brown sugar, and eggs until light and fluffy, about 2-3 minutes. Add buttermilk, vegetable oil, and vanilla extract, mixing until smooth.
- Gradually combine the dry ingredients with the wet mixture, mixing until just combined.
- Divide the batter evenly between prepared pans. Bake for 30-35 minutes until a toothpick comes out clean.
- Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- For the buttercream, beat softened butter until creamy. Gradually add powdered sugar and eggnog until desired consistency is reached. Mix in vanilla extract and nutmeg.
- Once cakes are cool, frost with buttercream, and decorate as desired.
Notes
For a festive look, sprinkle with nutmeg or decorate with holly berries. Use room temperature ingredients for best results.
