Ingredients

  • ½ cup brown sugar
  • 3 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup eggnog (for frosting)
  • 1 cup powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In another bowl, beat granulated sugar, brown sugar, and eggs until light and fluffy, about 2-3 minutes. Add buttermilk, vegetable oil, and vanilla extract, mixing until smooth.
  4. Gradually combine the dry ingredients with the wet mixture, mixing until just combined.
  5. Divide the batter evenly between prepared pans. Bake for 30-35 minutes until a toothpick comes out clean.
  6. Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  7. For the buttercream, beat softened butter until creamy. Gradually add powdered sugar and eggnog until desired consistency is reached. Mix in vanilla extract and nutmeg.
  8. Once cakes are cool, frost with buttercream, and decorate as desired.

Notes

For a festive look, sprinkle with nutmeg or decorate with holly berries. Use room temperature ingredients for best results.
