Description
Delight in a simple yet delectable dessert that combines the tangy flavors of orange and tart cranberries in an easy-to-make bar form.
Ingredients
Scale
1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup unsalted butter, melted
1 cup fresh cranberries
3 large eggs
1/2 cup fresh orange juice
Zest of 1 orange
1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a mixing bowl, combine the flour, sugar, and melted butter. Mix well until crumbly, then press the mixture evenly into the bottom of your prepared baking dish.
- Place the baking dish in the preheated oven and bake for about 15 minutes until the edges are lightly golden.
- While the base is baking, whisk together the eggs, orange juice, zest, and a pinch of salt in a separate bowl until well combined.
- Fold the fresh cranberries into the egg mixture gently.
- Once the base has finished baking, remove it from the oven and pour the curd filling over the hot base. Return it to the oven and bake for another 15-20 minutes, until the filling is set and slightly jiggly in the center.
- Let the bars cool in the dish for at least an hour before cutting into squares. Dust with powdered sugar for a beautiful finish if desired.
Notes
For a healthier alternative, consider using whole wheat flour or natural sweeteners like honey or maple syrup. Serve with whipped cream or fresh fruit.
