Delight in a simple yet delectable dessert that combines the tangy flavors of orange and tart cranberries in an easy-to-make bar form.


Ingredients

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 cup unsalted butter, melted

1 cup fresh cranberries

3 large eggs

1/2 cup fresh orange juice

Zest of 1 orange

1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine the flour, sugar, and melted butter. Mix well until crumbly, then press the mixture evenly into the bottom of your prepared baking dish.
  3. Place the baking dish in the preheated oven and bake for about 15 minutes until the edges are lightly golden.
  4. While the base is baking, whisk together the eggs, orange juice, zest, and a pinch of salt in a separate bowl until well combined.
  5. Fold the fresh cranberries into the egg mixture gently.
  6. Once the base has finished baking, remove it from the oven and pour the curd filling over the hot base. Return it to the oven and bake for another 15-20 minutes, until the filling is set and slightly jiggly in the center.
  7. Let the bars cool in the dish for at least an hour before cutting into squares. Dust with powdered sugar for a beautiful finish if desired.

Notes

For a healthier alternative, consider using whole wheat flour or natural sweeteners like honey or maple syrup. Serve with whipped cream or fresh fruit.
