1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened unsalted butter, brown sugar, and granulated sugar. Cream together until light and fluffy.
- Mix in the creamy peanut butter until fully incorporated. Then, add the egg and vanilla extract, beating until creamy.
- In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients and mix on low speed until just combined.
- Fold in the chocolate chips with a spatula until evenly distributed.
- Spoon tablespoon-sized amounts of cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.
- Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Notes
Serve warm right out of the oven with a scoop of vanilla ice cream or a glass of cold milk. For a gourmet touch, drizzle with melted chocolate or sprinkle with sea salt.
