Ingredients

1/2 cup Cocoa Powder

1 cup Granulated Sugar

1 tsp Baking Powder

1/2 tsp Baking Soda

1/4 tsp Salt

2 large Eggs

1 cup Milk

1/2 cup Vegetable Oil

1 tsp Peppermint Extract

1 cup Chocolate Chips


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  2. In a bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, milk, oil, and peppermint extract.
  4. Pour the wet ingredients into the dry ingredients and stir gently to combine.
  5. Fold in the chocolate chips.
  6. Fill the muffin cups about 2/3 full with batter.
  7. Bake for 18-20 minutes or until a toothpick comes out with a few moist crumbs.
  8. Allow to cool before serving.
