Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin.
- In a bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the eggs, milk, oil, and peppermint extract.
- Pour the wet ingredients into the dry ingredients and stir gently to combine.
- Fold in the chocolate chips.
- Fill the muffin cups about 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick comes out with a few moist crumbs.
- Allow to cool before serving.
