Instructions
- Preheat your oven to 350°F (175°C).
- Chop the pistachios coarsely.
- Cream the softened butter and granulated sugar until light and fluffy.
- Mix in the egg and vanilla extract.
- In a separate bowl, whisk together the flour and salt, then gradually add to the wet ingredients.
- Fold in the chopped pistachios.
- Scoop tablespoons of dough onto a parchment-lined baking sheet.
- Bake for 12-15 minutes until the edges are lightly golden.
- Cool the cookies and dust with powdered sugar.
Notes
For a vegan option, use a flaxseed egg. Store cookies in an airtight container for up to a week.
