3/4 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Chop the pistachios coarsely.
  3. Cream the softened butter and granulated sugar until light and fluffy.
  4. Mix in the egg and vanilla extract.
  5. In a separate bowl, whisk together the flour and salt, then gradually add to the wet ingredients.
  6. Fold in the chopped pistachios.
  7. Scoop tablespoons of dough onto a parchment-lined baking sheet.
  8. Bake for 12-15 minutes until the edges are lightly golden.
  9. Cool the cookies and dust with powdered sugar.

Notes
