Ingredients

Bagels (plain, everything, or onion)

Large Eggs

Heavy Cream

Sharp Cheddar or Gruyere Cheese

Spinach

Mushrooms

Onion (sweet or yellow)

Salt

Pepper


Instructions

  1. Cut each bagel in half horizontally and scoop out some of the inner bread.
  2. Heat olive oil in a skillet and sauté chopped onions and mushrooms for 5-7 minutes. Add spinach and cook until wilted.
  3. In a mixing bowl, whisk together eggs, heavy cream, salt, and pepper. Stir in sautéed vegetables and cheese.
  4. Fill each bagel half generously with the quiche mixture.
  5. Preheat the oven to 375°F (190°C) and bake for 20-25 minutes until the egg is set and tops are golden.
  6. Allow to cool for a few minutes before serving.
