Instructions

  1. In a large mixing bowl, combine the dry ingredients: flour, cocoa powder, sugar, and baking soda. Whisk together. In a separate bowl, mix wet ingredients: buttermilk, eggs, vegetable oil, red food coloring, and vanilla extract. Gradually combine the wet and dry mixtures, stirring until just combined.
  2. Preheat a non-stick skillet over medium heat and lightly grease it with oil or butter.
  3. Ladle about ¼ cup of batter onto the hot pan for each pancake. Cook until bubbles form on the surface and edges appear set, 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
  4. Remove pancakes from the skillet and stack them on a plate, serving with cream cheese frosting, fresh berries, or syrup of your choice.
