Ingredients

2 ripe mangoes, peeled and diced
1 red bell pepper, finely chopped
1 small red onion, finely diced
1/4 cup fresh cilantro, coarsely chopped
2 tablespoons freshly squeezed lime juice
1 tablespoon olive oil
Sea salt, to taste
Black pepper, to taste
Instructions
- Begin by peeling and dicing the ripe mangoes into bite-sized cubes.
- Finely chop the red bell pepper and red onion.
- Rinse the cilantro under cold water, dry it and chop it coarsely.
- In a small bowl, whisk together the lime juice, olive oil, sea salt, and black pepper.
- In a large mixing bowl, gently toss the diced mangoes, bell pepper, red onion, and cilantro. Pour the lime dressing over the salad and mix until evenly coated.
- Serve immediately, chilled or at room temperature.
Notes
Best enjoyed fresh. Store leftovers in an airtight container in the fridge, ideally consumed within 2 days.
