A vibrant and healthy mango salad bursting with tropical flavors, perfect as a light lunch or side dish.


Ingredients

2 ripe mangoes, peeled and diced

1 red bell pepper, finely chopped

1 small red onion, finely diced

1/4 cup fresh cilantro, coarsely chopped

2 tablespoons freshly squeezed lime juice

1 tablespoon olive oil

Sea salt, to taste

Black pepper, to taste


Instructions

  1. Begin by peeling and dicing the ripe mangoes into bite-sized cubes.
  2. Finely chop the red bell pepper and red onion.
  3. Rinse the cilantro under cold water, dry it and chop it coarsely.
  4. In a small bowl, whisk together the lime juice, olive oil, sea salt, and black pepper.
  5. In a large mixing bowl, gently toss the diced mangoes, bell pepper, red onion, and cilantro. Pour the lime dressing over the salad and mix until evenly coated.
  6. Serve immediately, chilled or at room temperature.

Notes

Best enjoyed fresh. Store leftovers in an airtight container in the fridge, ideally consumed within 2 days.
