A striking and delicious appetizer that pairs earthy roasted beets with creamy goat cheese for a perfect balance of flavors.
Ingredients

4 medium-sized Roasted Beets
8 oz fresh Goat Cheese
1/2 cup Walnuts
1/4 cup Fresh Herbs (Chives or Parsley)
2 tbsp Honey
2 tbsp Lemon Juice
Salt and Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wrap the beets in aluminum foil and place them on a baking sheet. Roast for 45-60 minutes until tender. Allow cooling before peeling.
- While the beets cool, chop walnuts and finely dice the herbs. Combine in a bowl.
- In another bowl, mix the softened goat cheese, honey, lemon juice, salt, and pepper until smooth and creamy.
- Once the beets are cooled, chop them into small pieces. On a sheet of plastic wrap, spread half of the cheese mixture into a log shape, layer with diced beets, then top with the remaining cheese mixture. Roll tightly to form a log.
- Chill the log in the refrigerator for at least 30 minutes to firm up.
- Remove from plastic wrap and roll in the walnut and herb mixture to coat.
- Serve with crackers or sliced baguette alongside fresh fruit for contrast.
Notes
Be sure to refrigerate the log in an airtight container for up to 5 days, or freeze for up to 3 months.
