- 8 oz fresh mushrooms (button or cremini)
- 1 yellow onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp fresh thyme (or 1/3 tsp dried thyme)
- Salt and pepper, to taste
Instructions
- Prepare the Ingredients: Gather all ingredients and chop onion, carrots, celery, and mushrooms into bite-sized pieces.
- Sauté the Base: In a large pot, heat olive oil over medium heat. Add chopped onion and sauté for 2-3 minutes until translucent. Add garlic, carrots, and celery, cooking for an additional 5 minutes.
- Add the Mushrooms: Stir in the chopped mushrooms and cook for 5-7 minutes until they release moisture and brown slightly.
- Incorporate the Chicken: Shred the rotisserie chicken, discarding skin and bones. Add chicken to the pot and stir to combine.
- Pour in the Broth: Add chicken broth and bring to a gentle boil. Reduce heat and let it simmer for 15 minutes.
- Add Cream and Thyme: Stir in heavy cream and fresh thyme, simmering for an additional 5 minutes.
- Season and Serve: Season with salt and pepper. Ladle into bowls and garnish with additional thyme as desired.
Notes
For a lighter version, you can replace heavy cream with low-fat milk or almond milk. Adjust seasonings to taste.
