  • 1 cup heavy cream
  • 1 tsp fresh thyme (or 1/3 tsp dried thyme)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Ingredients: Gather all ingredients and chop onion, carrots, celery, and mushrooms into bite-sized pieces.
  2. Sauté the Base: In a large pot, heat olive oil over medium heat. Add chopped onion and sauté for 2-3 minutes until translucent. Add garlic, carrots, and celery, cooking for an additional 5 minutes.
  3. Add the Mushrooms: Stir in the chopped mushrooms and cook for 5-7 minutes until they release moisture and brown slightly.
  4. Incorporate the Chicken: Shred the rotisserie chicken, discarding skin and bones. Add chicken to the pot and stir to combine.
  5. Pour in the Broth: Add chicken broth and bring to a gentle boil. Reduce heat and let it simmer for 15 minutes.
  6. Add Cream and Thyme: Stir in heavy cream and fresh thyme, simmering for an additional 5 minutes.
  7. Season and Serve: Season with salt and pepper. Ladle into bowls and garnish with additional thyme as desired.

Notes

For a lighter version, you can replace heavy cream with low-fat milk or almond milk. Adjust seasonings to taste.
