Description

Ingredients

  • 12 cloves garlic, minced
  • 1 large onion, chopped
  • 2 medium potatoes, diced
  • 6 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prepare the garlic by peeling and finely mincing the cloves.
  2. Sauté the minced garlic and chopped onion in melted butter over medium heat for 5-7 minutes until translucent.
  3. Add diced potatoes and vegetable broth to the pot, stir, and bring to a gentle boil.
  4. Season with thyme, bay leaf, salt, and pepper, and let simmer for about 25 minutes, or until the potatoes are fork-tender.
  5. Remove the bay leaf and blend the soup until smooth using an immersion blender.
  6. Stir in the heavy cream and heat on low for an additional 5 minutes.
  7. Serve hot, garnished with olive oil or fresh thyme.

Notes

For a lighter version, substitute heavy cream with Greek yogurt or plant-based cream.
