Ingredients

- 12 cloves garlic, minced
- 1 large onion, chopped
- 2 medium potatoes, diced
- 6 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Prepare the garlic by peeling and finely mincing the cloves.
- Sauté the minced garlic and chopped onion in melted butter over medium heat for 5-7 minutes until translucent.
- Add diced potatoes and vegetable broth to the pot, stir, and bring to a gentle boil.
- Season with thyme, bay leaf, salt, and pepper, and let simmer for about 25 minutes, or until the potatoes are fork-tender.
- Remove the bay leaf and blend the soup until smooth using an immersion blender.
- Stir in the heavy cream and heat on low for an additional 5 minutes.
- Serve hot, garnished with olive oil or fresh thyme.
Notes
For a lighter version, substitute heavy cream with Greek yogurt or plant-based cream.
