1 tablespoon Dijon or English mustard

Instructions
- Prepare the Eggs: Boil the eggs for 6–7 minutes, then place them in an ice bath.
- Cool and Peel: Let the eggs cool for 5 minutes, then peel carefully.
- Prepare the Sausage Mixture: Mix sausage meat with mustard, salt, pepper, and herbs in a bowl.
- Coat the Eggs: Dredge eggs in flour, then wrap sausage mixture around each egg, ensuring full coverage.
- Prepare for Frying: Dip coated eggs in beaten egg, then roll in breadcrumbs.
- Fry the Eggs: Heat oil in a pan and fry each egg for 5–6 minutes until golden brown.
- Drain and Serve: Remove from oil and let drain on paper towels before serving.
