- 1 fresh baguette
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil, torn
- 1 cup mozzarella, torn into pieces
- 2 tbsp olive oil
- 2 tbsp balsamic glaze
- 2 cloves garlic, minced
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the baguette into 1/2-inch thick pieces and arrange on a baking sheet. Brush each side lightly with olive oil.
- Toast the bread in the oven for 5-7 minutes until golden and crispy.
- In a bowl, mix the chopped cherry tomatoes, torn basil, olive oil, balsamic glaze, and season with salt and pepper.
- Arrange the toasted bread slices in a circular shape on a platter.
- Spoon the tomato mixture generously over the bread slices.
- Add torn pieces of mozzarella over the toppings.
- Drizzle with balsamic glaze and garnish with whole basil leaves.
- Serve immediately while still crispy.
Notes
For a vegan option, swap mozzarella for vegan cheese. Serve with optional dips like hummus or tzatziki.
