Ingredients

2 tablespoons olive oil
2 large onions, sliced
2 cloves garlic, minced
4 cups wild mushrooms (chanterelles, shiitakes, cremini)
4 cups vegetable broth
4 cups kale, chopped
Salt, to taste
Pepper, to taste
Optional: lemon juice, for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add sliced onions and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes until golden brown.
- Add minced garlic and sauté for an additional minute until fragrant. Then toss in the wild mushrooms and cook for 8-10 minutes.
- Pour in the vegetable broth, making sure to deglaze the pot by scraping browned bits from the bottom. Bring to a gentle boil.
- Reduce heat and stir in chopped kale. Cover and simmer for 15-20 minutes until kale is tender.
- Season with salt, pepper, and a squeeze of lemon juice if desired. Serve hot!
Notes
