Delight in the warmth of soft and chewy gingerbread men cookies, perfect for holiday celebrations.

Ingredients

Scale
  • 3 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 tablespoon Ground Ginger
  • 1 tablespoon Ground Cinnamon
  • 1 teaspoon Nutmeg
  • 1 cup Unsalted Butter, softened
  • 1 cup Brown Sugar, packed
  • ½ cup Molasses
  • 1 large Egg
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking soda, ground ginger, cinnamon, nutmeg, and salt.
  3. In a separate bowl, beat together the softened butter, brown sugar, and molasses until creamy and smooth.
  4. Beat in the egg and vanilla extract until fully combined.
  5. Gradually mix in the dry ingredients with the wet mixture until just combined.
  6. Using a cookie scoop, form dough into small balls and place them on a parchment-lined baking sheet.
  7. Bake in the preheated oven for 8-10 minutes. The cookies should be soft to the touch.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a lighter version, consider replacing half the butter with applesauce. Avoid overmixing the dough to keep cookies soft.
