Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the flour, baking soda, ground ginger, cinnamon, nutmeg, and salt.
- In a separate bowl, beat together the softened butter, brown sugar, and molasses until creamy and smooth.
- Beat in the egg and vanilla extract until fully combined.
- Gradually mix in the dry ingredients with the wet mixture until just combined.
- Using a cookie scoop, form dough into small balls and place them on a parchment-lined baking sheet.
- Bake in the preheated oven for 8-10 minutes. The cookies should be soft to the touch.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a lighter version, consider replacing half the butter with applesauce. Avoid overmixing the dough to keep cookies soft.
