Instructions

  1. Prepare the ingredients by peeling and chopping the potatoes, onions, and garlic.
  2. In a large pot, heat olive oil over medium heat and sauté the onions until translucent.
  3. Add garlic and thyme, stirring for an additional minute until fragrant.
  4. Introduce the chopped potatoes into the pot, stirring to coat them with the aromatic mix, and cook for about 2-3 minutes.
  5. Pour in the vegetable broth, ensuring the potatoes are fully submerged, then bring to a boil before reducing to simmer for 20-25 minutes.
  6. Use an immersion blender to purée the soup until completely smooth.
  7. Adjust seasoning with salt and pepper, and add a dash of lemon juice if desired.
  8. Ladle the soup into bowls and optionally garnish with fresh herbs or a drizzle of olive oil.

Notes

For added richness, consider substituting part of the broth with coconut milk. Store leftovers in an airtight container in the fridge for up to four days.
