Description

Ingredients

1 large egg

1 cup milk

1 ripe banana, mashed

1 cup strawberries, chopped

Instructions

  1. In a large mixing bowl, combine flour, sugar, baking powder, and salt. Whisk together until well blended.
  2. In a separate bowl, mash the ripe banana and combine it with the egg and milk. Whisk until smooth.
  3. Add the wet mixture to the dry ingredients and stir gently until just combined.
  4. Fold in the chopped strawberries into the batter.
  5. Heat a non-stick skillet over medium heat and add a small amount of butter or oil.
  6. Pour about 1/4 cup of batter for each pancake. Cook until bubbles appear on the surface, then flip and cook for another 2 minutes.
