1 cup Water
1/2 cup Unsalted Butter
1 cup All-Purpose Flour
4 large Eggs
1/4 cup Granulated Sugar
Pinch of Salt
1 cup Powdered Sugar
1/2 cup Strawberry Puree
2 tablespoons Milk
Instructions
- In a medium saucepan over medium heat, combine water, unsalted butter, and salt. Bring to a simmer, allowing butter to melt completely.
- Rapidly add the flour and stir vigorously until the dough pulls away from the sides, forming a ball.
- Transfer the dough to a mixing bowl and cool for about 5 minutes. Gradually add the eggs, mixing well after each addition.
- Scoop the dough into a piping bag with a star tip. Pipe 3-inch rings on a parchment-lined baking sheet.
- Heat oil in a fryer or pot to 350°F (175°C) and fry the crullers in small batches for about 3-4 minutes per side until golden brown.
- In a bowl, combine powdered sugar, strawberry puree, and milk. Adjust consistency as needed.
- Once the crullers are cool, dip tops into the strawberry glaze and set on a wire rack to let glaze harden.
Notes
For a gluten-free option, substitute with almond flour. Use coconut oil for lower saturated fat.
