Ingredients

4 oz dark chocolate (60% cocoa or higher)
1/2 cup unsalted butter (or coconut oil)
1/2 cup granulated sugar (or coconut sugar)
2 large eggs (or flax egg)
1/4 cup all-purpose flour (or almond flour)
1 cup fresh strawberries (sliced)
1 tsp vanilla extract
Powdered sugar (for dusting)
Instructions
- Preheat your oven to 425°F (220°C).
- In a medium heat-proof bowl, melt chocolate and butter together over simmering water or in the microwave until smooth.
- Whisk in granulated sugar, then add eggs one at a time, whisking thoroughly after each addition.
- Gently fold in flour and vanilla extract until just combined.
- Grease four ramekins with butter and dust with flour.
- Layer sliced strawberries in ramekins and cover with batter.
- Bake for 12-14 minutes, until edges are firm but the center jiggles.
- Cool for 1-2 minutes, then invert onto plates. Dust with powdered sugar and serve immediately.
