Description

Indulge in the rich chocolate and refreshing strawberry combination of these delightful lava cakes, perfect for impressing guests.


Ingredients

Scale

4 oz dark chocolate (60% cocoa or higher)

1/2 cup unsalted butter (or coconut oil)

1/2 cup granulated sugar (or coconut sugar)

2 large eggs (or flax egg)

1/4 cup all-purpose flour (or almond flour)

1 cup fresh strawberries (sliced)

1 tsp vanilla extract

Powdered sugar (for dusting)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium heat-proof bowl, melt chocolate and butter together over simmering water or in the microwave until smooth.
  3. Whisk in granulated sugar, then add eggs one at a time, whisking thoroughly after each addition.
  4. Gently fold in flour and vanilla extract until just combined.
  5. Grease four ramekins with butter and dust with flour.
  6. Layer sliced strawberries in ramekins and cover with batter.
  7. Bake for 12-14 minutes, until edges are firm but the center jiggles.
  8. Cool for 1-2 minutes, then invert onto plates. Dust with powdered sugar and serve immediately.

Notes
