1 cup unsalted butter, softened
1 cup granulated sugar
1 egg (or flax egg for a vegan option)
1 teaspoon vanilla extract
2 cups all-purpose flour (or almond flour for gluten-free)
1 teaspoon baking powder
½ teaspoon salt
1 cup strawberry jam
Sprinkles (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Incorporate the egg and vanilla into the mixture, mixing well.
- In a separate bowl, combine the all-purpose flour, baking powder, and salt. Gradually add this to the wet ingredients.
- Drop dough onto a lined baking sheet, pressing a small indentation in the center.
- Spoon a dollop of strawberry jam into each cookie indentation.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on a wire rack and decorate with sprinkles if desired.
