1 ½ cups all-purpose flour
½ cup unsweetened cocoa powder
1 ½ cups granulated sugar
1 tsp baking soda
1 tsp baking powder
½ tsp salt
½ cup vegetable oil
2 large eggs
1 cup buttermilk
1 tbsp red food coloring
16 oz cream cheese, softened
1 cup sour cream
¾ cup granulated sugar
2 tsp vanilla extract
3 large eggs
1 cup fresh strawberries, for topping
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, mix vegetable oil, sugar, eggs, buttermilk, and red food coloring until smooth.
- Incorporate dry ingredients into wet, mix until just combined.
- Grease and flour two 9-inch round cake pans. Divide batter evenly and bake for 25-30 minutes. Let cool in pans for 10 minutes.
- In a bowl, beat cream cheese until smooth, then add sour cream, sugar, and vanilla, mixing until combined.
- Add eggs one at a time, beating well after each addition.
- Preheat oven to 325°F (165°C). Pour cheesecake filling over one cooled cake layer.
- Bake for 45 minutes or until cheesecake is set but jiggly in center. Cool before refrigerating for at least 4 hours.
- Once set, place the second cake layer on top, add fresh strawberries, and serve chilled.
Notes
To enhance flavor, consider using whole wheat flour and Greek yogurt as healthier alternatives.
