Description

A creamy and nutritious breakfast option that combines chia seeds, almond milk, and fresh strawberries for a delicious start to your day.

Ingredients

Scale

1/4 cup chia seeds

2 cups almond milk (or coconut/oat milk)

1 cup fresh strawberries, diced

1 tsp vanilla extract (or vanilla bean paste)

2 tbsp maple syrup (or honey/agave syrup)

1/2 cup Greek yogurt (optional)

Instructions

  1. In a mixing bowl, whisk together the chia seeds, almond milk, and vanilla extract until well combined. Let it sit for about 5 minutes.
  2. Add maple syrup to the mixture, adjusting sweetness to taste. Stir well.
  3. Gently fold in the diced strawberries, saving a few slices for topping.
  4. Transfer mixture to jars or bowls, cover, and refrigerate for at least 4 hours or overnight.
  5. Before serving, stir the pudding and top with extra strawberry slices and Greek yogurt if desired.

Notes

Store the pudding in airtight containers for up to 5 days in the refrigerator. Avoid freezing to maintain texture.
