Instructions
- Cook the rice noodles according to the package instructions; rinse under cold water and set aside.
- In a small bowl, mix together soy sauce, oyster sauce, fish sauce, and sugar.
- In a large skillet, heat vegetable oil over medium-high heat, add minced garlic and chili peppers, sauté for 30 seconds.
- Add bell peppers and onions, stir-fry until slightly softened, about 3-4 minutes.
- Add cooked noodles to the skillet, pour sauce over them, and mix gently.
- Push noodles to one side, crack eggs into the pan and scramble. Mix eggs into noodles.
- Remove from heat, fold in Thai basil and lime juice.
- Serve hot, garnished with lime wedges and chili flakes if desired.
Notes
For a vegan version, substitute eggs with tofu and omit fish sauce. Fresh ingredients enhance flavor and texture.
