Ingredients

Wide Rice Noodles

Soy Sauce

Oyster Sauce

Fish Sauce

Sugar

Thai Basil

Instructions

  1. Cook the rice noodles according to the package instructions; rinse under cold water and set aside.
  2. In a small bowl, mix together soy sauce, oyster sauce, fish sauce, and sugar.
  3. In a large skillet, heat vegetable oil over medium-high heat, add minced garlic and chili peppers, sauté for 30 seconds.
  4. Add bell peppers and onions, stir-fry until slightly softened, about 3-4 minutes.
  5. Add cooked noodles to the skillet, pour sauce over them, and mix gently.
  6. Push noodles to one side, crack eggs into the pan and scramble. Mix eggs into noodles.
  7. Remove from heat, fold in Thai basil and lime juice.
  8. Serve hot, garnished with lime wedges and chili flakes if desired.

Notes

For a vegan version, substitute eggs with tofu and omit fish sauce. Fresh ingredients enhance flavor and texture.
