Ingredients

1 ½ cups all-purpose flour
¾ cup granulated sugar
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 large egg
½ cup buttermilk
â…“ cup vegetable oil
Zest of 1 large orange
Juice of 1 large orange
½ cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin with non-stick spray or line it with paper liners.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the egg, then stir in buttermilk, vegetable oil, orange zest, and orange juice.
- Make a well in the center of the dry mixture and pour in the wet mixture. Gently fold until just combined.
- If using walnuts, fold them into the batter.
- Scoop the muffin batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 20 minutes, or until a toothpick inserted comes out clean.
- Let the muffins cool in the tin for about 5 minutes before transferring to a cooling rack.
Notes
Serve warm with cream cheese or butter. These muffins can also be paired with yogurt or fresh fruit.
