Description

Delightful muffins that combine the refreshing flavor of oranges with a moist and fluffy texture, perfect for breakfast or a snack.


Ingredients

1 ½ cups all-purpose flour

¾ cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 large egg

½ cup buttermilk

â…“ cup vegetable oil

Zest of 1 large orange

Juice of 1 large orange

½ cup chopped walnuts (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin with non-stick spray or line it with paper liners.
  3. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, beat the egg, then stir in buttermilk, vegetable oil, orange zest, and orange juice.
  5. Make a well in the center of the dry mixture and pour in the wet mixture. Gently fold until just combined.
  6. If using walnuts, fold them into the batter.
  7. Scoop the muffin batter into the prepared muffin tin, filling each cup about ¾ full.
  8. Bake for 20 minutes, or until a toothpick inserted comes out clean.
  9. Let the muffins cool in the tin for about 5 minutes before transferring to a cooling rack.

Notes

Serve warm with cream cheese or butter. These muffins can also be paired with yogurt or fresh fruit.
