Description
This easy peach raspberry cobbler is the ultimate comfort dessert—juicy peaches, tart raspberries, and a buttery golden topping baked to perfection. Perfect for summer gatherings, weeknight treats, or anytime you’re craving something sweet, warm, and homemade.
Ingredients
4–5 ripe peaches (about 4 cups), sliced
1 ½ cups raspberries (fresh or frozen)
½ cup granulated sugar (adjust depending on sweetness of fruit)
2 teaspoons flour (to thicken the fruit juices)
1 cup all-purpose flour (for topping)
½ cup brown sugar
2 teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter, melted
¾ cup milk (whole or 2%)
1 teaspoon vanilla extract
½ teaspoon ground cinnamon (optional)
Instructions
Preheat oven to 375°F (190°C). Grease a medium baking dish with butter.
In a large bowl, toss peaches and raspberries with granulated sugar and 2 teaspoons flour. Spread evenly in the baking dish.
In another bowl, whisk together flour, brown sugar, baking powder, and salt.
Stir in melted butter, milk, and vanilla until just combined—batter will be slightly thick.
Pour batter over the fruit mixture, spreading gently. Sprinkle with cinnamon if desired.
Bake for 35–40 minutes, until the topping is golden brown and fruit is bubbling at the edges.
Let rest for 10 minutes before serving warm with vanilla ice cream or whipped cream.
