Ingredients
Scale
4 sheets of puff pastry
3 cups whole milk
3/4 cup granulated sugar
1/2 cup all-purpose flour
5 large egg yolks
2 teaspoons pure vanilla extract
1/2 cup unsalted butter, softened
Powdered sugar for dusting (optional)
Instructions
Preheat oven to 400°F (200°C). Place each puff pastry sheet on a baking sheet lined with parchment paper. Prick surface gently with a fork. Bake 12-15 minutes until golden and crisp. Let cool completely.
Combine 2 1/2 cups milk and half the sugar in a saucepan. Warm until hot but not boiling. Whisk egg yolks with flour and remaining sugar until smooth. Slowly pour warm milk into egg mixture, whisking constantly to temper eggs.
Return mixture to saucepan, add vanilla extract. Cook over medium-low heat, stirring constantly until custard thickens and coats the back of a spoon, about 7-10 minutes. Remove from heat and cool slightly.
Beat softened butter until fluffy. Gradually mix into slightly cooled custard to add richness and smooth texture.
Place one puff pastry layer on serving plate. Spread a generous layer of cream. Repeat layering pastry and cream, ending with a pastry sheet on top. Save some cream for decorating if desired.
Refrigerate the cake for at least 4 hours or overnight to allow layers to absorb the cream and meld flavors.
Dust the top lightly with powdered sugar before slicing and serving.
